Fill up on the season&#8217;s finest with these family-friendly salad recipes suggested by the culinary team of the Royal Palm Hotel.<\/p>\n<p>These meals are quick, easy, and seriously delicious, giving you more time for what really matters; summer cocktails!<\/p>\n<p><strong>Strawberry, Avo &amp; Goat Cheese Salad <\/strong><\/p>\n<p>(Serves 4)<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>300g rocket and watercress, rinsed and spun<br \/>\n2 ripe avocados, de-pipped and scooped<br \/>\n2 cups strawberries, rinsed, hulled and quartered<br \/>\n1 cup peanut brittle, loosely crushed<br \/>\n1 cup goats\u2019 cheese, crumbled<br \/>\n3 tbsp balsamic glaze<br \/>\nsalt and black pepper, to season<\/p>\n<p><em>For the balsamic glaze:<\/em><br \/>\n1\/2 cup balsamic vinegar<br \/>\n2 tbsp brown sugar<\/p>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>For the balsamic glaze: heat the vinegar and brown sugar in a small saucepan over medium heat. Simmer for 6-8 minutes, stirring occasionally or until reduced and slightly syrupy. Remove, cover and set aside to cool.<\/li>\n<li>Start with the rocket and watercress.<\/li>\n<li>Scoop in the avo.<\/li>\n<li>Scatter sliced strawberries.<\/li>\n<li>Crumble the goats\u2019 cheese.<\/li>\n<li>Smash and sprinkle the peanut brittle (be generous).<\/li>\n<li>Season with freshly-ground black pepper and drizzle on your dressing.<\/li>\n<\/ol>\n<p><strong>Indian Chicken Salad<\/strong><\/p>\n<p>(serves 4)<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>4 Large skinless chicken breasts<br \/>\n1 heaped tbsp of masala powder<br \/>\nA bunch of coriander, stalks chopped and leaves separated<br \/>\n1 lime<br \/>\n150ml coconut milk<br \/>\n2 Heaped tbsp mango chutney<br \/>\n\u00bd cucumber<br \/>\n100g bag of baby spinach leaves<br \/>\n1 small red onion, thinly sliced into rings<br \/>\n4 poppadums broken into chunky pieces<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Lay the chicken breasts in between a double layer of cling film and bash out using a rolling pin until about 1cm thick. Rub with the tandoori spice mix and some seasoning. With a griddle pan over a medium heat, cook the chicken for about 3-5 mins on each side until cooked through.<\/p>\n<p>To make the dressing, mix together the coriander stalks, lime zest and juice, coconut milk and mango chutney until you have a pourable dressing \u2013 then season. Arrange the salad ingredients on a big platter. When the chicken is cooked, slice it and add to the salad. Then drizzle on some dressing, scatter with coriander and poppadum pieces and serve.<\/p>\n<p><strong>Biltong, avo &amp; Feta <\/strong><\/p>\n<p>(serves 4)<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>Tzatziki dressing &#8211;<\/p>\n<p>1 cup of low fat plain yogurt<br \/>\n1-3 garlic cloves<br \/>\n2 teaspoons of fresh lemon juice<br \/>\n1\/3 \u00a0teaspoon of salt<br \/>\n\u00bd cucumber, peeled<br \/>\nSalad &#8211;<br \/>\n\u00bd \u00a0cucumber, sliced<br \/>\n1 packet rocket and watercress<br \/>\n1 avocado<br \/>\n1 yellow pepper, sliced<br \/>\n1 punnet cherry tomatoes<br \/>\n1 ripe mango, sliced<br \/>\n200g moist beef biltong, sliced<br \/>\n60g feta cheese<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Toss together all the salad ingredients and serve the salad with tzatziki dressing.<\/p>\n<p>And if you still don\u2019t have time for these quick meals, head on to the Royal Palm Hotel.
